Carla Kelly has published three previous vegan cookbooks, and her fourth, just out now is called: True to Your Roots: Vegan Recipes to Comfort and Nourish You. It’s a vibrant book, with tasty looking, hearty recipes that use root vegetables in inventive and creative ways. From stews, soups, and sides, there are recipes in here for juices, salads, desserts, and entrees inspired by cuisines from all over the world. We also encounter root vegetables that aren’t well-known. And we’re also taught to use them from ‘root to tip,’ not wasting anything. Carla Kelly, who joins me now, has authored Vegan al Fresco, Quick and Easy Vegan Slow Cooking, and Quick and Easy Vegan Bake Sale. Her website is at www.veganyear.blogspot.ca.
