Simple Summer Pasta Salad
This pasta salad is great for that summer barbeque or a picnic at the park. It's quick, easy, and simple, and can even almost be prepared the night ahead. Perhaps add a bit of chicken, and you've got yourself a complete meal!
Ingredients:
- 1 Box (450g) Tri-Coloured Rotini
- 2 Peppers (Any colours you'd like - red, green, yellow, orange)
- 1 Cup Broccoli Florets
- ½ Red Onion
- 1 Cup Sun Dried Tomato, Italian, or Greek Salad Dressing
- ¼ Parmesan Cheese, if desired
- A Pinch of Salt
Directions:
Cook pasta in salted water until it is al dente, and rinse in cold water. While the pasta is cooking, cut small broccoli florets and blanch in boiling water for approximately 10-30 seconds or until bright green. Drain and shock florets in ice-cold water, then set aside. Cut peppers and red onion into thin slices. Mix together pasta, broccoli florets, peppers and onions. Then add preferred salad dressing and toss. Sprinkle parmesan cheese and toss again.
If preparing the salad the night ahead, add the salad dressing and parmesan cheese just prior to serving. Enjoy!
